Ingredients:
- 1 or more of the following
- Red leaf, green leaf, or romaine lettuce
- Swiss chard
- Baby spinach leaves
- 3 or more of the following
- Avocado, chopped
- Carrot, grated
- Celery, thinly sliced
- Fresh basil, finely chopped
- Green bell pepper, chopped
- Green or black olives, chopped
- Green or sweet onion, chopped
- Mung bean sprouts, chopped
- Mushrooms, sliced
- Parsley, chopped (not too much)
- Radishes, sliced
- Red or green cabbage, thinly sliced
- Red or yellow bell pepper, chopped
- Tomato, chopped
- Zucchini blossoms, coarsely chopped
Fill a large bowl with ingredients. Mix well. (Note: Avoid using iceberg lettuce or pre-made salad mixes, as they contain very little nutrition.)
For added flavor, top with sunflower seeds, soy nuts, cheese, or bacon bits.
