Dinner Salad

Ingredients:

  • 1 or more of the following
  • Red leaf, green leaf, or romaine lettuce
  • Swiss chard
  • Baby spinach leaves
  • 3 or more of the following
  • Avocado, chopped
  • Carrot, grated
  • Celery, thinly sliced
  • Fresh basil, finely chopped
  • Green bell pepper, chopped
  • Green or black olives, chopped
  • Green or sweet onion, chopped
  • Mung bean sprouts, chopped
  • Mushrooms, sliced
  • Parsley, chopped (not too much)
  • Radishes, sliced
  • Red or green cabbage, thinly sliced
  • Red or yellow bell pepper, chopped
  • Tomato, chopped
  • Zucchini blossoms, coarsely chopped

Fill a large bowl with ingredients. Mix well. (Note: Avoid using iceberg lettuce or pre-made salad mixes, as they contain very little nutrition.)

For added flavor, top with sunflower seeds, soy nuts, cheese, or bacon bits.
