Cream of Mushroom Soup

Ingredients:

  • 2 c. half-and-half
  • 2 c. water
  • 3/4 c. mushrooms, sliced or chopped
  • 1/2 c. celery, chopped (optional)
  • 1 tbsp. chopped garlic
  • 1 tsp. salt
  • 1 tbsp. corn starch
  • 1 tbsp. water

Pour milk and water into medium saucepan and bring to a boil. Reduce heat and add salt, garlic, mushrooms, and celery. Dissolve cornstarch in remaining water and add to soup. Continue to cook, stirring frequently, until vegetables are cooked and soup has thickened.

(This does not make particularly thick soup. If you desire thicker, add additional cornstarch using above method.)
