Broccoli-Cheese Soup

Ingredients:

  • 1 lb. broccoli, chopped
  • 1/2 carrot, grated
  • 8 oz. cheddar cheese, chopped
  • 1/3 c. mayonnaise
  • 1 cup heavy cream
  • 1 cup milk
  • 1/2 tbsp. basil
  • Approx. 1/8 tsp. cardamom

Melt cheese in medium saucepan. Add mayonnaise and mix well. Add cream and milk and bring to a low boil, stirring frequently.

Add broccoli, carrot, and seasonings. Stir well and continue to cook until hot.
