Sunny-Side Up Fried Eggs

This is more a technique than a recipe, to be honest, but is a useful skill to have.

Ingredients:

  • 1 tbsp. oil
  • 2 eggs
  • Salt to taste

Add oil to frying pan and bring to medium heat. Reduce heat. Crack eggs into pan, taking care not to crack yolks. Salt eggs.

Leave yolks unbroken as eggs cook. Once the undersides are white, use spatula to splash hot oil onto top of eggs. This will cause top whites to begin cooking. Allow to cook in this fashion for some time, then turn over eggs and finish cooking whites.

If done correctly, this will result in firm, opaque whites with barely-cooked, runny yolks. They can be broken and allowed to run over eggs or used as a dip for toast or sausage.
