Add garlic and 1 tbsp. oil to small skillet. Bring to medium heat, then add onion and celery or pepper. Fry, stirring regularly, until onions are translucent. Reduce heat to medium-low and add remaining oil.
Crack eggs into bowl and beat with fork until mixed. Add salt if desired and mix into vegetables. Continue stirring eggs and vegetables until eggs take on a solid scrambled look. Continue to cook, stirring regularly, until egg whites are completely opaque.
Remove to bowl. Serve with whatever condiments you desire. (Geri recommends Parmesan cheese.)
