Honey-Butter Eggs

Ingredients:

  • 1/4 c. grated coconut
  • 1/3 c. half-and-half
  • 2 tbsp. butter
  • Dash salt
  • 2 eggs
  • 2 tsp. honey

Combine coconut and half-and-half in tall, microwave-safe dish. Microwave on HIGH for one minute and stir. Repeat twice, taking care not to boil over mixture. Allow to sit for about five minutes.

Add butter and salt and mix thoroughly. Beat eggs in separate dish, then add to coconut mixture. Mix well.

Return to microwave and cook in 30-second increments, stirring between each one, until eggs are solidified. Add honey and mix well. Eat as-is or with a dollop of sour cream.
