Stir-Fry

This is an easy and flexible recipe that comes in handy when you have end-lots of vegetables sitting around your fridge.

Ingredients:

  • 2 lbs. beef, pork, or chicken, cut into bite-sized pieces
  • 1/2 tbsp. five spice powder (or simply garlic)

3 or more of the following:

  • Green pepper, chopped
  • Onion, chopped
  • Cabbage, thinly sliced
  • Celery, sliced
  • Baby corn, cut into inch-long segments
  • Mushrooms, sliced
  • Bean sprouts, cut into inch-long segments
  • Canned water chestnuts
  • Broccoli spears, cubed
  • Peanuts, sunflower seeds, or edamame (not to exceed 1/2 c.)

Brown meat in large skillet. Add vegetables, mix well, and cover. Cook covered for approximately 20 minutes, stirring occasionally. Remove lid, add seasonings, and mix well. Continue to cook without lid until vegetables are just cooked. Remove from heat and serve from skillet.
