Simmered Chinese Chicken

Ingredients:

  • 1 whole chicken
  • 1-4 tbsp. oil
  • 1/3 c. soy sauce
  • 1/4 c. honey
  • 1/2 c. water
  • 1 tsp. ketchup
  • 1/2 c. mashed strawberries or muskmelon
  • 1/2 tsp. ground cayenne pepper
  • 1 clove garlic, crushed
  • 2 tbsp. chopped onion
  • 1-2 tbsp. cornstarch
  • 1 tsp. water

Add oil to large kettle or Dutch oven, bring to medium heat. Add chicken and cook, turning when necessary, until browned on all sides (or back and breast). Mix together remaining incredients, except cornstarch and water, and pour over chicken. Cover, reduce heat, and simmer for 35-45 minutes.

Once chicken is fully cooked, remove to plate. Mix cornstarch and water, then add to sauce, stirring until fully mixed. Cook, stirring regularly, until thickened. Remove to bowl and serve.

This dish goes particularly well when served with fried stir-fry vegetables. Pour sauce over vegetables and serve separately, or top vegetables with chicken and drizzle with sauce.
