Ingredients:
- 4-5 large chicken breast pieces
- 16 oz, frozen broccoli, thawed and chopped
- 2 c. frozen peas, thawed (optional)
- 1 small onion, finely chopped
- 1 can olives, chopped
- 8-10 marinated artichoke hearts (optional)
- 1.5 tbsp curry powder
- 3/4 c. mayonnaise
Brown chicken - making sure to cook thoroughly - then cool. While chicken cooks, prepare broccoli, peas, onion, and olives, and mix together. Chop and add artichoke hearts and chicken. Add mayonnaise and curry powder and mix thoroughly.
