Curry Chicken Salad

Ingredients:

  • 4-5 large chicken breast pieces
  • 16 oz, frozen broccoli, thawed and chopped
  • 2 c. frozen peas, thawed (optional)
  • 1 small onion, finely chopped
  • 1 can olives, chopped
  • 8-10 marinated artichoke hearts (optional)
  • 1.5 tbsp curry powder
  • 3/4 c. mayonnaise

Brown chicken - making sure to cook thoroughly - then cool. While chicken cooks, prepare broccoli, peas, onion, and olives, and mix together. Chop and add artichoke hearts and chicken. Add mayonnaise and curry powder and mix thoroughly.
