Despite their sordid reputation as dangerous, artery-clogging lipids from the underworld, fats actually perform vital functions in the human body. They are used in the maintainance of several bodily components, including brain, nerve, and skin tissue. For that reason, our recipes incorporate significant - but not excessive - quantities of fat.
Another oft-maligned food, butter is traditionally replaced by shortening or margarine - both of which have recently been outed for containing trans fats, a much more dangerous substance than the saturated fats contained in butter.
As the debate between high-fructose corn syrup and plain sugar rages on, it is strange - and even unfortunate - that honey is usually ignored. Honey is a natural sweetener, far less processed than either sugar or high-fructose corn syrup. It is also significantly sweeter - depending on the recipe, it can be up to twice as potent, greatly reducing the amount of sugar needed.
This is strictly a matter of preference, as fresh vegetables tend to taste better than their frozen or canned counterparts. We understand that fresh vegetables may not always be available or convenient, so feel free to substitute whatever is available.
